Making Your Own Almond Milk
You don’t have to be held to the almond milk formulations offered in stores, though. You can make almond milk at home. Typically, homemade almond milk recipes call for one part almonds and three parts water. But to determine your own optimal ratioand if you don’t mind a little mixologyyou can now buy almond base and add water. One brand, Joi, sells shelf-stable tubs that contain a paste made simply from blanched organic almonds . The company suggests mixing 1 to 2 tablespoons with a cup of water. Two tablespoons would provide 16 grams of fat, 6 grams of protein, and 6 grams of carb, with 4 grams as fiber. That’s right on par with the macronutrient makeup of an ounce of raw almonds , according to the US Department of Agriculture.
Meanwhile, the plant-based meal delivery brand Daily Harvest offers Mylk: almond milk in the form of frozen wedges, made from just nuts, pink sea salt, and vanilla bean . The wedges last six months in the freezer and can be blended with water alone or added with liquid to smoothies, lattes, or oat bowls. Two wedges provide 8 grams of fat, 4 grams of protein, and 2 grams of carb, with 1 gram as fiber.
How Much Protein Does Milk Have
Advocacy groups like the National Dairy Council are quick to tell you that milk is an excellent source of high-quality protein and theyre right. All types of cow milk, including lowfat milk, nonfat milk and whole milk, are between 3 and 4 percent protein. In other words, for every 100g serving of cow milk you drink, you get between 3 and 4 grams of protein.
The Institute of Medicine recommends that adults get at least 0.8 grams of protein for every kilogram of body weight. Low-fat milk is considered a healthy source of protein for meeting this goal.
Almond Milk Can Contain Additives
The most apparent almond milk additivesand those easiest to avoidare sweeteners and other flavorings.
Sweetened almond milk can contain significant amounts of sugar. Excessive sugar consumption, of course, is linked to tooth decay and weight gain. It can also contribute to chronic conditions, like diabetes and even heart disease.
Health experts’ warnings regarding the dangers of a “sugar epidemic” make plain almond milk the healthiest option.
If you find the taste of natural almond milk unpalatable, sweetened almond milk is an alternative. However, it can help if you always examine the nutrition label. You should, as with all foods, also consume sweetened almond milk in moderation.

Going Nuts About Milk Heres What You Need To Know About Plant
I dont necessarily need to take milk products out of my diet. But as a consumer who is curious about cooking, nutrition, and innovative uses for ingredients, seeing non-dairy, plant-based milk alternatives seemingly everywhere I turn makes me curious to know more.
For some individuals, belly and headaches or allergic reactions make a switch from all things dairy to a non-dairy alternative a requisite reality beyond mere curious inquiry or choice. Others may switch from dairy because they like a different taste or texture, or want an additional nutrient that a milk alternative offers. Almond Milk Nutritional Breakdown
Theres no one way to formulate almond milk. And because of that, the nutritional breakdown of almond milk is different for each product. Overall, though, the protein and carb contents in unsweetened almond milk are quite low per cup, so the main macronutrient youre getting is healthful fat. But that can vary widely from product to product, depending on how many almonds a particular milk contains . In other words, some products contain more almonds than others, which is one factor that impacts the drinks potential health benefits.
For perspective, an 8-ounce portion of Elmhurts unsweetened almond milk provides 11 grams of good fat, 5 grams of plant protein, and just 3 grams of carbohydrate, with no added sugar. A 1-cup serving provides 6% of the daily value for iron and 4% for potassium.
Of course, thats just one product example. The simplest unsweetened versions contain just two ingredients: water and almonds. But if a product is fortified , the vitamin and mineral content of almond milk can vary considerably.
Some almond milk brands are fortified with calcium, which can bump up the minerals daily value to meet or exceed the amount found in cows milk. If theyve been put into a products formulation, vitamins D and B12 are other nutrients you may find in higher amounts in almond milk.
In addition, some companies add protein to almond milk, primarily pea protein, sourced from yellow split peas. Whether these products still qualify as almond milk is up for debate.

I just discovered this too and went to post it. Just a helpful hint: you can subtract the calories found in the almond meal left over that youve strained out. You can enter a negative number in as how much meal you got out of it.
I also make almond milk, and wanted to mention that I have found that a nylon makes an excellent substitute for a nut-milk bag! Also, I agree with other statements regarding the calorie count in the nutritional values. This milk made with 5 cups of water is probably closer to 40 calories :
Ive been making homemade almond milk for over a year now. I add 1 teaspoon vanilla. It is wonderful! The left over pulp can go into any homemade bread, muffin, pancake, waffle, etc. recipe for additional nutrition.
Almond milk is my secret weapon. I replaced creamer with Almond milk and cut my calories by over 100 a day!!
I make my own almond milk also. It is yummy. I just wanted to point out that the nutritional info is probably not accurate. The recipe calculator does not take into account that you are removing most of the nut meat in the cheese cloth. The calories are actually much lower. I would guess 40-60.

Just How Many Almonds Does It Take To Make Almond Milk
I grew up in central California. I was surrounded by almond orchards. They are beautiful when all the flowers bloom. We used to buy 25-pound boxes of almonds, and we would eat raw almonds all the time in trail mixes, or just a plain handful. So, I love almonds!
And although Im obviously a big proponent of dairy milk, I dont hate almond milk. I actually think the flavored and sweetened stuff tastes pretty good. It doesnt really taste like milk though. People are free to buy what they want. One of the goals of this blog is to teach people things. I am more concerned that people make educated food choices based on facts, rather than marketing.
As for me, I prefer cows milk, but you are free to select your beverage of choice. That being said, I want to make sure people who choose to consume almond milk over cows milk are doing it with all the factsfree of the guilting, fear-mongering, and general misinformation out there.
Almond milk is becoming a serious contender in the dairy case of the grocery store. People seem to turn to almond milk for a few reasons:
1. They suffer from either a dairy allergy or lactose intolerance
2. They have moral qualms with the dairy industry
3. They choose almond milk because it is lower in calories
I want to focus on the third reason.

Almond Milk Also Has Upsides And Downsides
Though sustainability has become one of the biggest arguments against almond milk, concern about the thickeners used in the beverage has also brought it under fire.
The additive in almond milk is carrageenan, Castillo says. Carrageenan is used to thicken almond milk and prevent separation, but there are concerns that it may cause inflammation and damage in the intestines.
Castillo and other nutrition experts feel that more research will help clarify the impact carrageenan has on the body. Though there are several studies that use animals as subjects, a review in the Food & Function Journal of existing studies also determined there isnt enough evidence to determine the effects of carrageenan on the body.
Plus, since almond milk doesnt offer the natural sweetness that oat milk does, its often sweetened. Whether youre specifically monitoring your carbs or not, both Castillo and Modell always recommend opting for the unsweetened stuff.
That said, almond milk is still significantly lower in calories than oat milk, which is a plus if you want to limit how much of your daily calorie intake comes from beverages.

Does Almond Milk Have Carbs
100 grams of conventional almond milk from the grocery store gives us the following nutritional values :
- Energy: 25.0 calories
- Dietary fiber: 0.0 grams
- Net carbs: 5.3 grams
While cows milk has almost twice as much sugar as conventional almond milk, it also has more fat. Thus, it comes to fat to net carbohydrate ratio of 0.62.
Shockingly, this is a better value than that of almond milk. Unless it is specifically labeled as unsweetened, almond milk is not ideal for the keto diet.
However, you can ultimately distinguish sweetened from unsweetened almond milk just by looking at the nutritional values.
Enriched Almond Milk Is High In Vitamin D
Many people are low or deficient in vitamin D. This raises the risk of brittle bones, fatigue, and weak muscles .
There are few good sources of vitamin D in the human diet. Thats why a common public health strategy is to enrich certain foods with vitamin D. This especially applies to milk products.
Just like regular milk, almond milk often contains added vitamin D. The amount of vitamin D varies between products. For example, 1 cup of almond milk may contain 2.62 micrograms, which is 13% of your DV. A cup of vitamin-enriched cows milk contains similar amounts .
This makes enriched almond milk a useful source of vitamin D that can prevent deficiency if you consume it regularly.
Bottom line: Almond milk is often enriched with vitamin D, and consuming it often may help prevent vitamin D deficiency.
