Pancakes are delicious, quick, and quite literally couldnt be easier to make. This recipe will yield about 14 servings!

Start by adding the ingredients into a blender in the order listed above.

Then, blend the mixture until it is completely smooth and there are no chunks or grittiness. Be sure to scrape down the sides as needed.

Let the batter rest for 5 minutes to allow it to thicken.

Finally, use a 1/4 cup to scoop and pour the batter onto a heated pan. Cook the pancake over medium heat for about 3-4 minutes on each side. Slowly cooking the pancakes will result in fluffy, fully cooked cakes!

The First Additional Ingredient: Yogurt

Now before I get into why, lets first clarify a few things about what kind of yogurt to use.

First of all, you want a plain, full-fat yogurt and yes, I said FULL -fat. Dont let me come to your house and see low or no fat yogurt in your fridge.

But seriously, low or no fat does NOT equate to healthier. You NEED healthy, good fats in your diet, contrary to what you may have heard against fat.

The SUGAR is what you want to watch out for!

So again, look for a full fat yogurt that is HIGH in protein LOW in sugar as low as you can find, as there will be some sugar content.

This is why I recommend plain yogurt the less ingredients it has, the lower in sugar it will be.

Not all protein types would work well with pancake mixes, but yogurt seems to work just fine. But other protein sources that could be added are:

eggs or egg whites this may change the texture of the pancakes and make them eggier UNLESS you use the kind of mix that requires you to add eggs, milk and oil. Otherwise, if using the just add water mix, then again, adding eggs may make the pancakes noticeably different in texture.

oats Like eggs, oats may change the texture of the pancakes. If your kids are anything like mine and dont like the nutty texture, you may wish to forgo this addition if youre trying to be sneaky about it! But if they dont mind, oats do have 5 grams of protein per 1/2 cup dry. If I were to add oats, Id probably grind them up as much as possible in the blender to make it more flour-like.

How To Store + Freeze Protein Pancakes

One of the best things about this recipe is how well these protein pancakes freeze!

Sometimes I will make a big batch of these pancakes, eat a couple for breakfast, and freeze the rest for busy mornings. I let my pancakes cool completely on a wire rack, place them on a baking tray in the freezer for about an hour and then transfer them to a freezer safe plastic bag.

They will last about 2 months in the freezer. Just take a couple out, thaw, reheat them in the microwave or toaster, and enjoy!!

raspberries are very high in fiber if you dont mind raspberry pancakes, however one common way to enjoy raspberries with your pancakes, is to make a topping such as jam or syrup.

Now, if youre making them healthier for yourself, you probably dont have to worry as much about texture changes, etc. unless YOU dont want them gooey/nutty either! lol

But play around with the measurements, adding only a small amount of each item. Then, work up to more the next time until you find that perfect balance that is just right for you.
